Luscious strawberry pie

Yesterday was a good day to spend time in the kitchen and ’tis the season for strawberries. So, what could be better than an easy peasy strawberry pie?

I do have to admit to using a pre-made crust; I used PetRitz deep dish, not as good as homemade, but a fairly decent substitute. A 2-pie pack makes one for the bottom and one for the top.

Here’s How:

Hull the strawberries and cut up or slice, your choice. Mix all of the ingredients with the berries and spoon into the shell; avoid the liquid in the bottom of the bowl as too much liquid will make the crust soggy.

Put on the top crust, trim and crimp the edges. Brush the top with an egg wash and sprinkle some sugar on top. Bake 15-20 mins at 400F degrees, turn down to 375F degrees and bake another 20-30 mins until bubbling and golden brown.

You will definitely want to bake it on a foil or parchment lined tray to catch any of that sweet gooey filling that might bubble over. Sure glad I did.

Wait at least 3 hours, savoring the aromas wafting through your house. This gives your pie filling time to thicken. Enjoy with a scoop of your favorite vanilla ice cream.
