Today we have a CAPRESE SALAD. the salad of Capri. A simple salad of tomatoes, mozzarella and basil, with a light dressing of olive oil, balsamic vinegar and salt.

A very simple, diet-friendly lunch or dinner salad. A salad perfect for those hot days when you don’t want to cook. A salad perfect for those nights when it is late and you haven’t had time to cook.

Serve it in layers, stacked or chunked; serve it skewered. Use big, juicy tomatoes or small cherry tomatoes; colorful heirlooms work as well. Mozzarella slices, balls or chunks, fresh is best.

Rich in antioxidants, protein, calcium, vitamins and minerals, this salad packs a wallop from all the deliciously fresh ingredients. And did I say, you can have this on the table within minutes?

So grab your tomatoes, mozzarella, basil, olive oil, balsamic vinegar and salt for dinner in 10!

This salad pairs nicely with a light, crisp white wine, like Spier Sauvignon Blanc from South Africa.

There are no hard and fast rules for caprese salad. I have seen recipes with goat cheese, recipes with strawberries, roasted tomatoes – no olive oil, and some with pepper.
