5 Days of Holiday Appetizers – Bruschetta

Today, it’s another simple recipe that’s easy to put together. You might recognize the ingredients – tomato, basil, oil and vinegar.

Sound familiar? I have posted in the past suggestions for a caprese salad or a light lunch, both with tomatoes and basil. Today we turn the duo into a party appetizer.

Let’s Make Tomato Basil Bruschetta

  • 2 red ripe tomatoes, seeded and finely chopped (about 1 1/2 cups)
  • 4 basil leaves, chopped
  • 2 cloves garlic, finely chopped
  • 2 Tbls extra virgin olive oil
  • 1 Tbls balsamic vinegar
  • Salt and Pepper
  • Mix all the ingredients.
  • Serve with toasted crostini and blue cheese crumbles.

I like to let my guests assemble these themselves. Easier for me and they choose if they want cheese. The crostini stays crisp as well.

Double or triple the recipe for leftovers. Then you can bake a bruschetta chicken breast for dinner.

What is crostini?

Crostini is a fancy name for toasty slices of baguette bread. Slice in about 1 inch pieces, drizzle both sides with olive oil and toast under the broiler.
