
Lunch with Fresh Tomatoes and Basil
- Spread bread slices with olive oil and garlic, then toast
- Top with chopped tomatoes, chunks of fresh mozzarella and basil
- Then drizzle with balsamic glaze
- Serve with an “Arnold Palmer”
An “Arnold Palmer” is an iced drink of half tea and half lemonade. It was first requested by Arnie and became a drink of choice by many after a day on the golf course.
Goat cheese or Bleu cheese would be good substitutes for the mozzarella.
To make a balsamic glaze, simply boil any inexpensive balsamic vinegar down to a syrupy consistency.
Oh, I could enjoy this any day 🙂 And I like the choice of cheese – especially for those with allergies.

This is so good when tomatoes are fresh off the vine. I actually prefer the goat cheese but use whatever I have. If you have a really good balsamic vinegar it is almost a glaze so I just drizzle that. Simple and quick is my style.
