What’s For Dinner? Arugula and Apple Salad with Pork Medallions

Our weather has been typical August in the Southeast U.S. – hot and humid. So when confronted with having to decide “what’s for dinner?” I thought – Salad. But, not just any salad and not chicken; I wanted something different and delicious. It’s not easy – there are too many things Bud doesn’t like; and he’s not a fan of salad.

Scouring online I found this recipe – pork tenderloin with apple slices over a bed of lettuce – that would work. Since I was making a trip to the grocer anyway, I could pick up a pork tenderloin and some apples.

WOW! It was so much better even than it sounded. I don’t think my substituting romaine lettuce and balsamic vinegar changed the recipe. The warm, sweet, tangy dressing over the lettuce and the salty crustiness of the pork with the crunch of the apples and almonds was so satisfying and delicious. Crusty bread slices and a glass of Sauvignon Blanc rounded out the meal.

It got Bud’s vote. It’s a keeper!
