Soup is good food! What better way to take the chill off a cool fall evening than with a good, hearty bowl of soup?
A recent visit to Pinterest turned up this Black and White Bean Sausage Soup, compliments of Rodale Wellness.

Low in calories, high in fiber and protein, this soup is healthy and delicious. As an added bonus, it only takes 30 minutes (or so the recipe says). I had to peel and chop all the veggies, so it took me longer.
Ingredients
Black and White Bean Sausage Soup
2 tablespoons. extra-virgin olive oil
3 cups pre-diced mirepoix* (2-3 carrots, 1 onion, 2-3 stalks celery)
3 cloves garlic, chopped
4 cups reduced-sodium chicken stock
2 red potatoes, diced
1/2 pound Italian sausage, casing removed
1 15-oz. can black beans, drained and rinsed
1 15-oz. can white beans, drained and rinsed
3 tablespoons pesto\
Pair it with a nice Pinot Noir or red blend, then serve with crusty bread and a sprinkling of freshly grated parmesan cheese. Enjoy!
